The main components
- Eggs. I’m adding a combined eggs to these breakfast tacos and use my favorite method Making crushed eggsA number
- Potatoes and peppers. I add one potatoes to this recipe. I use Yukon Gold and it’s cooking it before it makes it quickly cooked and adds a beautiful texture (almost like Hash Browns). Add some jalapeos or serrano pepper to the mixture for the spicer taco.
- Bacon (optional): Crispy bacon is a delicious addition. I bake mine but you can make it but you prefer. Here is How to bake bacon?A number
- Cheese. The cheddari cheeses, Monterey Jack or Oaxaca are great choices.
- Tortiles. Use shop-purchased or homemade tortillas. Try our Corn tortillas or Flour tortillasA number
- Salsa and Toppings. I recommend a simple green salsa as my Minced Tomatillo Salsa Or the brand purchased of your favorite store. Then I add some crunch with chopped white onions or Sour red onionsA number
How to make breakfast tacons
We cook grated potatoes with some sliced peppers to make the addition of these breakfast tacos. When the potatoes cook and become a little fragile, we are stir in eggs and turn it into a man.
I’m quite serious about grated eggs and have already shared my advice to make them best. I highly recommend reading our Matched egg recipe To see how I do it. It’s easy.

Just as eggs finish the preparation, we swing in some cheese and when we feel like cooked bacon. Then we accumulate everything in a warm tortilla and scatter our favorite green salsa, chopped onion and avocado. Easy, satisfactory and absolutely delicious.
