I made this Pico de Gallo recipe than I can countAnd I’m always happy to do. This recipe is fast and easy, and some simple tricks, you can taste it really authentic.

Pico de Gallo is a fresh Mexican fresh salsa made with simple, fresh ingredients such as tomatoes, onions, Cilantro and Al Alobenus. My family loves it and we make it constantly. It works so well as salsa or tapping inside Tacos, Burritos on top of the rice bowl. It’s epic Homemade tortilla chipsAnd if you are ready to make it, it really goes well next to Homemade Guacamole:Authority
I have two tricks for the best Pico de Gallo. First, absorb your onion for 10 minutes, wash them, then mix with the remaining salsa ingredients. This simple trick mellows on the onion raw flavor and reduces the breath of the onion. Second, you really want to season with Pico De Gallo with salt, then leave for 20 minutes before you sit. Salt pours the tomatoes and liquid and a further ton of raw onion bite. Is it worth waiting?
The main components
- Fresh tomatoes. Choose mature, juicy tomatoes and crush them small. Because tomatoes sit with other ingredients (especially salt), they release their amazing juices that make our Pico de gallon even more delicious.
- Onions. I use white onions when I can find them as they are the most choice but you can exchange them for a yellow or sweet onion. Pour your chopped onions in cold water for 10 minutes to soften the raw onions, then wash. (I use this trick for our Guacamole recipetoo)
- Jalapeño or serrano chilies. Add heat and more taste. Remove the seeds and the white membrane inside the pepper. For a spicy Pico de Gallo, leave a few or all seeds and membrane.
- Cilantro and lime. Fresh Cilantro and lime strainer is mandatory for a real taste. A pinch of salt will increase everything.

For that, use ripe tomatoes and tomatoes look for them deeply colored and durable, giving a little. If they don’t smell like anything, skip them. They should throw like tomatoes (sweet and woody).

Adam and Junny tips
- How long does Pico de Gallo take? In his book, “Authentic Mexican”, Rick Bayer says that fresh salsa like Pico de Gallo is the best best. We agree, but I have to admit that we are still very pleased with this recipe in one recipe within one day. Over time, you will lose several crises, but it still tastes great.
