Raw zucchin makes incredible salads and we love this fresh zucchini noodle salad Mediterranean inspired Greek yogurt sauce, feta cheese, tomatoes and olives.

Zucchini doesn’t get enough credit for salads. I love crude zucchini salads, so I am perceived by this zucchini noodles with seasoned Greek yogurt sauce, feta and tomato. Because zucchin goes raw, it keeps it a little better Cooked zucchini noodleswhich are better enjoying immediately. After dressing this salad is good for a few days.

The main components
- Zucchini. You can use the store purchased zoodles or make them (noodles made from zucchini). For the best results, use fresh, solid zucchini. I shared how to make zucchini noodles below.
- Cucumbers, tomatoes, red onions and olives. Additional vegetables we add to this zucchini salad are inspired by a Classic Greek saladFor a number of olives, I use Kalamata, but green castelvetrano olives are also really delicious.
- Feta cheese. Like the classic Greek salad, we add a lot of feta. You can baken it on the salad or do what I did in our photos and add larger cubes.
- Greek yogurt sauce. My outfit begins with simple Greek yogurt, then I mix garlic cloves, crumpled feta, lemon basket and juice, olive oil, honey and some Sriracha.
How to make Mediterranean zucchini noodles salad
I am very advised to use an alcohol to make zucchini noodles with this recipe. If you don’t have one I have included the tips below, Zoes without (mandolin or peeling work).
A spiral creates a long, curly zucchini noodles in minutes. My model is from Padner (it was about $ 30). To make the loose ones.
- Secure spiral for your countertop (the mine has absorbent glasses). Cut the zucchini ends and press it firmly in the spiral.
- Turn off the handle until the whole zucchini turn into noodles. Because your noodles will be long, use scissors to cut noodles around 12 inches long.

When you prepare your noodles, you can weave them through dressing (which is as simple as mixing each other) and extra vegetables with feta cheese. Easy, fresh and so delicious.

Mediterranean zucchini noodle salad
You can make this Greek inspired zucchini noodle salad in 20 minutes. Yogurt-based sauce is just the right amount of garlic, feta cheese, lemon and sriracha hot sauce. The salad is perfectly eaten immediately or to make up to 2 days beforehand.

You will need
Zucchini salad
2 Medium zucchini, about 2 pounds
1/2 medium greenhouse cucumber, sliced in half moon
2 medium tomatoes, cut into small wedges
1/4 medium red onions, thinly sliced in half lights
2 ½ ounce feta cheese, cubic, about 1/2 cups
15 Kalamata Olives, drilled and halved
Yogurt sauce
1/4 cup Greek yogurt
1 medium garlic cloves, delicate minced
1 tablespoon crumpled feta cheese
1 teaspoon of lemon bead
1 tablespoon lemon juice
1 tablespoon of olive oil
1/2 teaspoon sriracha hot sauce or etc. taste
1/2 teaspoon honey
Salt and freshly ground black pepper
Directions:
1Prepare zucchini. Prepare and wrap on zucchini (see the posts below to do it without a browser). Then cut the enveloped zucchin for long noodles to be spaghetti’s length.
2Make dressing. Mix yogurt, garlic, feta cheese, lemon basket, lemon juice, olive oil, horror and honey together. For modest spices and adjust the salt, pepper and (or) Sriracha if necessary.
BookletPrepare the salad. Add zucchini noodles, cucumbers, tomatoes, red onions, cubes feta cheese and olives in a large bowl, then throw two thirds of yogurt. Add more sauce if necessary.
ThreeEnjoy the salad immediately or hold it in the refrigerator up to one day. The noodles will be slightly softened over time, but they will still have a crisis. If you come more than a day, keep the salad for a reasonable salad and dress separately and throw the day.

- Preparing Kukchi noodles without alcohol. Spiralich is not the only way to make noodles. You can use Julen’s vegetable peel or mandol. You can also use ordinary vegetable peel, wide noodles or strips.
- Holding raw zoobles. Keep your raw zucchini noodles with paper towels covered with a sealant container (paper towels help to absorb additional humidity). Refrigerator and use in 3 days.
