The perfect Campari Spritz is bold, refreshing and bubbly. We first tried this classic Italian cocktail in Venice and have loved it ever since.

After our trip to Italy, I came home in awe Aperol Spritz and Adam went for the bolder and bitter Campari Spritz. If you enjoy the complex, bittersweet taste of Campari or enjoy Negronis, I bet you’ll love the Campari Spritz cocktail.
Campari Spritz is less sweet and more herbal than Aperol Spritz. If you’re like Adam and prefer drier cocktails with a hint of bitterness, this might just become your new favorite cocktail.

Main ingredients:
- Campari. Look for Campari alongside liqueurs and bitters like Amaro. It’s a bold, bitter liqueur with herbal, citrusy notes. It’s great for those who like complex flavors. It’s often enjoyed on the rocks or as a drink a staple in classic cocktails like the Negroni.
- Prosecco. Look for Prosecco next to sparkling wines. This Italian sparkling wine has a light, crisp and fruity taste. Look for a Brut on the label. Avoid sweeter styles of Prosecco, such as Prosecco Dolce , which will make your cocktail too sweet mimosa) Small batch producers or bottles with DOC or DOCG labels are usually tastier and more enjoyable if you can find them. If you have a local wine shop, ask the staff for guidance and their recommendations.
- Soda water. Soda water works well. You can also use club soda with minerals and salt (I prefer this for the taste) or your favorite brand of sparkling water.
How to Make a Campari Spritz
The classic Campari Spritz recipe uses a 3-2-1 ratio. that means 3 parts Prosecco, 2 parts Campari and 1 part sparkling water. This mixture gives you a flavorful drink that is not too sweet.

If you find the Campari a little bitter, you can adjust the recipe to make it less bitter, use a little less Campari and a little more Prosecco. Prosecco and Campari and add more soda water. If the bitterness of Campari just isn’t for you and you prefer something sweeter, try making ours Aperol Spritz instead.
When making a Campari Spritz, I pour ice into the wine glass first, followed by the Prosecco, and a fresh slice of orange makes the perfect garnish, but gently be careful not to overdo it.You want to keep those lovely Prosecco bubbles.

Advice from Adam and Joan
- Prosecco. We recommend a medium Brut or extra Brut Prosecco. Sweeter styles will make the cocktail very sweet.
- Soda water. Use soda water, club soda, or your favorite soda.
- Adaptation to your taste. Campari has a bitter taste. If you find the bitterness to be overwhelming, tone down the Campari a bit and add Prosecco.
