My minced carrots and parsley are such a classic lateral dishand for a good reason. The stove transforms them, strengthening their flavor, caramelizing sugars and extremely striving for very little effort.

Easy ground carrots and parsley mint

Carrots and parsley are beautiful together, and you can make this fried version about 30 minutes. Fried carrots and parsley are perfect with just oil, salt and pepper, but we especially love them with fresh mint before serving.

1 pound (450 g) carrots, peeled, 4 to 5 medium

1 pound (450 g) parsleies, peeled, 4 to 5 medium

2 tablespoons olive oil or avocado oil

1/2 teaspoon of fine sea salt

1/2 teaspoon freshly ground black pepper

2 tablespoons chopped fresh mint, optional

Directions:
